Peri Peri Paneer with Sesame Crunch

Peri Peri Paneer with Sesame Crunch is a quick and wonderful starter you can serve with lunch or dinner or also enjoy it as a snack.

This recipe calls for soft and fresh paneer marinated with some seasonings and tossed in some oil or butter. To give this an extra crunch, I have coated paneer cubes with roasted seasoned sesame which takes this dish to another level.

My recipe for Babycorn Cigars is an easy one and super yummy that calls for babycorns wrapped in cheese slice and potato mash dipped in a slurry to secure the cheese, coated in bread crumbs and vermicelli fried till nice golden and crispy. I have soaked the babycorn in hot water for ten minutes and marinated with melted butter and seasonings. I have not boiled it as I like it a little crunchy, if you wish you could feel free to boil it. You can serve this starter with any dip or sauce of choice.

Soya chucks being absolutely nutritious and high in protein, is a very popular and versatile ingredient used in Indian Cooking . One can enjoy them guilt free as it requires very little oil for cooking. These are super crispy from outside and melt in the mouth and juicy inside. I have been very basic about the ingredients used here, you can feel free to add any veggies of your choice to this.

Cheese & Herbs Hasselback Potatoes are seasoned potatoes that turn out crispy on the outside and tender on the inside. The ideal way for preparing these potatoes is baking which honestly takes a lot of time specially when you plan to prepare four or five of them together. I have also tried another way to prepare these is by deep frying them and it is so much faster. Some also have an opinion to par boil the potatoes and then slice and bake them. I very much liked the fried one’s simply because, frying not only reduces the cooking time also makes the potatoes crispy and they get even crispier when baked after adding the cheese.

This recipes calls for medium sized potatoes and some seasonings and cheese. I have used the golden yellow potatoes, you can used any that is available, even baby potatoes work good. Duxelles – Well this is a French term used for finely chopped or minced mushrooms, cooked with garlic and seasonings. Duxelles can be prepared using various seasonings and it makes an amazing filling for puff pastries, croissants, chicken.

I’ve been fond of mushrooms ever since and enjoy my pizza’s, pastas, noodles almost all dishes that are loaded with mushrooms. When I learnt about Duxelles, I instantly recollected the chicken and mushroom pastries I used to pick up from Gaylord, a restaurant and bakery close to our house. I didn’t mind waiting patiently for the next batch to get baked as they were so delicious. As a kid I didn’t know that minced mushrooms were called Duxelles. Like always, I wanted to recreate the same taste that I relished during my childhood days and so, here I am with the recipe for Mushroom Duxelles.

Is served as an Indian snack, however at my home this is best enjoyed as an accompaniment with chole bhature.. chana puri… veg pulao and even biryani.
I enjoy the bhallas crispy when assembled with curd, so I prefer not to soak them in water before hand. However one can go ahead and soak them in water for a few minutes after frying them. I’ve used a fifty fifty ratio or soaked urad dal and yellow moong dal to make the batter, you could also use urad dal for this. A perfect summer recipe to prepare as an accompaniment to any of your dish or you could just enjoy this as is.
