Baked Mushroom Chicken Cups | Chicken Cups stuffed with Mushrooms

Baked Mushroom Chicken Cups yes you heard that right…. these cute cups are chicken cups baked out of thinly sliced marinated chicken breasts.

Baked Mushroom Chicken Cups make a wonderful appetizer and are perfect to serve for a party. You can use any filling of your choice, however I have used Mushroom Duxelles.

Mushroom and Chicken is the best combo and go together so well. Juicy chicken with the earthy flavor of mushrooms is absolutely appetizing. We all have eaten tarts, canapes and baked chicken, and this time it had to be baked chicken cups. These cups are absolutely tender and juicy and the stuffing of mushrooms and cheese make it even more amazing. I have used a muffin tray (backside of a muffin tray) to bake these cups, one can also use the moulded side. I just found it easier to place the chicken pieces on an upside down tray to give it a perfect cup shape.

Cheese & Herbs Hasselback Potatoes are seasoned potatoes that turn out crispy on the outside and tender on the inside. The ideal way for preparing these potatoes is baking which honestly takes a lot of time specially when you plan to prepare four or five of them together. I have also tried another way to prepare these is by deep frying them and it is so much faster. Some also have an opinion to par boil the potatoes and then slice and bake them. I very much liked the fried one’s simply because, frying not only reduces the cooking time also makes the potatoes crispy and they get even crispier when baked after adding the cheese.

Hasselback potatoes make an amazing appetizer that can be served with any sauce or dip of choice. I have a recent post for home made Cream Cheese Tzatziki Sauce you may want to try. This recipes calls for medium sized potatoes and some seasonings and cheese. I have used the golden yellow potatoes, you can used any that is available, even baby potatoes work good. I have also shared the method for the fried one’s towards the end of the post so you may choose your preferred way.

Quinoa Rice Paper Wraps make an instant snack if you have these stocked in your pantry cupboard. It also makes a perfect party appetizer. One can get as innovative and creative to wrap these as these are see through wrappers and look really cute.
For my event, I prepared and showcased a healthier version of these wraps giving it my own twist using Rice Paper and Quinoa filling and I was amazed by how my viewers were in love with my creation. Quinoa being a protein packed grain and rice paper being equally healthy as it is low in fat and calories this dish can be served as a whole meal with a tongue tickling dip!!
