Soya chucks being absolutely nutritious and high in protein, is a very popular and versatile ingredient used in Indian Cooking . One can enjoy them guilt free as it requires very little oil for cooking. These are super crispy from outside and melt in the mouth and juicy inside. I have been very basic about the ingredients used here, you can feel free to add any veggies of your choice to this.

These patties can be made as vegan burger patty as well, just skip the paneer and bread crumbs, add roasted besan instead and shape it into a burger patty, fry it and it’s ready. You may also want to check my recipes for Suran | Yam Tikki and Soya & Spinach Kebabs for veg options.

Ingredients:

  • 1 cup nutrela soya chunks
  • 1 cup paneer
  • 1 finely chopped onion
  • 1 tsp chopped or grated garlic
  • 1 tsp chopped or grated garlic
  • 1/2 tsp red chilli powder
  • 1/2 tsp haldi/turmeric
  • 1/2 tsp chat masala or amchur masala (dry mango powder)
  • 1 1/2 tbsp break crumbs
  • 1/2 cup chopped coriander
  • Salt as desired
  • Oil for cooking

Method:

  • Soak the soya chunks in hot water for around half hour. If you are using normal big size soya chunks and soaking in normal water, you may have to soak it longer.
  • Boil soya the soaked soya beans either on gas or in the microwave. I prefer microwave as it gets done in 2 minutes.
  • Squeeze out all the water from soya and put the chunks to a food processor and mince it fine.
  • Remove it in a bowl, add paneer and all above ingredients except oil and mix well.
  • Feel free to add little more bread crumbs for the mixture to bind better if feels loose.
  • Shape these in a patty or cutlets.
  • Drizzle some oil in a no stick pan, and fry these patties till both sides are nice and crisp.
  • Once gone, garish and serve with any dip of your choice.
  • Paneer & Soya Patties are ready, enjoy for breakfast over over a cup of evening tea or coffee
