No Bake Apple Cheese Cake | Cold Apple Cheese Cake – No Bake No Oven

Apple’s are one of my favourite fruits and it’s in season now and it’s a perfect fruit for this dessert. No Bake Apple Cheese Cake is again a cold dessert which is absolutely simple and easy to make. All you need is a pan, a whisk, a spatula and two glasses to assemble this. This recipes calls for caramelised apples, for which all you need is butter, brown sugar and some all purpose flour to bind it all together, flavouring it with a dash of cinnamon powder which takes this dessert to just another level. Also, Apple and Cinnamon make an amazing combination and very well together. Layer up the apple mixture with whipped cream and cream cheese along with some biscuit crumbs and serve chilled.

Zafrani Kumbh Kofta | Mushroom Kofta in Yellow Gravy

Zafrani Kumbh Kofta is one dish I prepared giving it my twist where I’ve used mushrooms stuffed with mashed potato which gives the stuffing a binding and the richness of grated paneer and raisins added to it. Usually, Indian versions of Kofta is prepared and served with gravy made of onions and tomatoes which is normally on a sweeter side. However, Zafrani Kumbh Kofta calls for stuffed mushrooms prepared and cooked in yellow gravy which has raisins added to it which giving the dish richness and sweetness. The gravy for this dish is a rich gravy which calls for cashews, cream and curd. Another and most important ingredient adding to the richness is Zafran which is also known as Saffron or Kesar in Hindi which is mostly used in Indian and Mughlai cuisine.

This is a perfect recipe one may want to follow for a Yellow Gravy / Yellow Curry and also for everyone who loves restaurant food. You can say it is a restaurant style Kumbh Kofta. This recipe for yellow gravy can be used as a base to prepare any dish with paneer, stuffed capsicum, mushroom mutter and even chicken. The garam masala used in this recipe is basically same masala that is used to prepare Korma/Qorma dishes. Masala Fried Eggs | Fried Eggs |

Masala Fried Eggs | Fried Eggs is the best, healthiest and a filling breakfast one can have. These are one of our favourite breakfast recipes with crispy edges and runny yolks. Usually we simply flavor these eggs with salt and pepper but this time I took an extra effort to add some chopped spring onions and break the eggs on top. And trust me it is just as good. I remember we used to call it Anda Pav and enjoyed with with soft ladi pavs, but you can eat this with white or brown bread as desired. I sometimes even toast up my breads and then top it up with the fried egg whites.

In my home, we have a separate pan just for eggs, there’s no particular reason but I simply prefer it that way. You can use a skillet, a non stick or an induction bottom non stick pan to make fried eggs. Simply heat up a pan, add ghee or oil and crack in some eggs carefully making sure the oil doesn’t splutter. I personally use ghee and it is important that it’s hot enough so the eggs don’t stick to the bottom of the pan and the edges get nice and crispy. If you want them more crispy, feel free to bast the egg whites or the sides with some hot ghee. You can cook one egg at a time or two to three as desired.

These Hash browns are super crispy on the outside and they not only make an amazing breakfast, I also prepare these as a side dish or snacks.

Hash browns are super easy to make, all you have to do is grate some potatoes, squeeze out all the starch and water and cook it in a pan or skillet till nice golden and crispy. You can add onion, garlic powder or any seasonings of your choice to make it more flavorful. I personally prefer garlic flavor and recently I also tried Cheesy Hash Browns Bites, which call for grated potatoes flavoured with Italian seasonings and garlic powder, baked in a muffin mould. These Cheesy Hash Browns are loaded with Cheese and one can feel free to add veggies of choice.

Tomato Onion Chutney | Onion Tomato Chutney | South Indian Tomato Chutney

Chutney is an essential a part of Indian Cooking and is prepared in almost all home’s with everyone having their own way to maki it. Tomato Onion Chutney makes a yummy condiment which has a tangy and spicy taste and goes very well with South Indian breakfast like Idli, Wada, Appam and Dosas. This is my go to chutney which can be served with any kind of snacks and is super easy to make with Onions, tomatoes, chillies and garlic with a tempering of mustard seeds.

Baked Mushroom Chicken Cups | Chicken Cups stuffed with Mushrooms

Baked Mushroom Chicken Cups yes you heard that right…. these cute cups are chicken cups baked out of thinly sliced marinated chicken breasts.

Baked Mushroom Chicken Cups make a wonderful appetizer and are perfect to serve for a party. You can use any filling of your choice, however I have used Mushroom Duxelles.

Mushroom and Chicken is the best combo and go together so well. Juicy chicken with the earthy flavor of mushrooms is absolutely appetizing. We all have eaten tarts, canapes and baked chicken, and this time it had to be baked chicken cups. These cups are absolutely tender and juicy and the stuffing of mushrooms and cheese make it even more amazing. I have used a muffin tray (backside of a muffin tray) to bake these cups, one can also use the moulded side. I just found it easier to place the chicken pieces on an upside down tray to give it a perfect cup shape.

Patty need not always be meaty these can also be delicious veggie patty. Paneer & Soya Patties make a perfect appetizer for vegetarians and an absolutely healthy snack. This is one of best veg cutlet recipe without potatoes that tastes utterly delicious.

Soya chucks being absolutely nutritious and high in protein, is a very popular and versatile ingredient used in Indian Cooking . One can enjoy them guilt free as it requires very little oil for cooking. These are super crispy from outside and melt in the mouth and juicy inside. I have been very basic about the ingredients used here, you can feel free to add any veggies of your choice to this.
