I have soaked the babycorn in hot water for ten minutes and marinated with melted butter and seasonings. Galouti means Galawat which means melt in the mouth and so the ingredients used in these kebabs all need to be really fine and smoothly minced. There are a lot of versions of these kebabs including veg and non veg and I have innovated my veg version of delicious melt in the mouth Quinoa Galouti Kebabs.
Quinoa Galouti Kebabs is a delicious and a rich veg version of a kebab recipe which calls for boiled quinoa, boiled yam (suran) minced together with kebab spices and a green paste. I call it a green paste which is prepared from coriander some mint leaves, brown onions with richness of cashews and fresh cream. Kebab masala is now easily available in the market so I prefer using the ready packs. However, one can also chose to make it at home. The magic to my recipe is adding the smoky flavor to the kebabs. Just like any tadka is incomplete without garlic, similarly kebabs are incomplete without the smoky flavor of coal. Galouti Kebabs are never deep fried as they are so soft and melt in the mouth and are usually cook or fried in a pan preferably non stick pan with little oil or ghee. Lesser the oil or ghee used is better to keep the kebabs intact.
Masala Fried Eggs | Fried Eggs is the best, healthiest and a filling breakfast one can have. These are one of our favourite breakfast recipes with crispy edges and runny yolks. Usually we simply flavor these eggs with salt and pepper but this time I took an extra effort to add some chopped spring onions and break the eggs on top. And trust me it is just as good. I remember we used to call it Anda Pav and enjoyed with with soft ladi pavs, but you can eat this with white or brown bread as desired. I sometimes even toast up my breads and then top it up with the fried egg whites.
In my home, we have a separate pan just for eggs, there’s no particular reason but I simply prefer it that way. You can use a skillet, a non stick or an induction bottom non stick pan to make fried eggs. Simply heat up a pan, add ghee or oil and crack in some eggs carefully making sure the oil doesn’t splutter. I personally use ghee and it is important that it’s hot enough so the eggs don’t stick to the bottom of the pan and the edges get nice and crispy. If you want them more crispy, feel free to bast the egg whites or the sides with some hot ghee. You can cook one egg at a time or two to three as desired.

Hash browns are super easy to make, all you have to do is grate some potatoes, squeeze out all the starch and water and cook it in a pan or skillet till nice golden and crispy. You can add onion, garlic powder or any seasonings of your choice to make it more flavorful. I personally prefer garlic flavor and recently I also tried Cheesy Hash Browns Bites, which call for grated potatoes flavoured with Italian seasonings and garlic powder, baked in a muffin mould. These Cheesy Hash Browns are loaded with Cheese and one can feel free to add veggies of choice.

Baked Mushroom Chicken Cups make a wonderful appetizer and are perfect to serve for a party. You can use any filling of your choice, however I have used Mushroom Duxelles.
Mushroom and Chicken is the best combo and go together so well. Juicy chicken with the earthy flavor of mushrooms is absolutely appetizing. We all have eaten tarts, canapes and baked chicken, and this time it had to be baked chicken cups. These cups are absolutely tender and juicy and the stuffing of mushrooms and cheese make it even more amazing. I have used a muffin tray (backside of a muffin tray) to bake these cups, one can also use the moulded side. I just found it easier to place the chicken pieces on an upside down tray to give it a perfect cup shape.

Soya chucks being absolutely nutritious and high in protein, is a very popular and versatile ingredient used in Indian Cooking . One can enjoy them guilt free as it requires very little oil for cooking. These are super crispy from outside and melt in the mouth and juicy inside. I have been very basic about the ingredients used here, you can feel free to add any veggies of your choice to this.
